Ingredients
For the Jasmine Foam:
- 300ml jasmine syrup
- 600ml water
- 80ml lime juice
- 75ml Proespuma
- 3 Proespuma capsules
For the Purple Angel Mix:
- 700ml Clement Rhum Agricole
- 700ml Koukoudo Mastiha
- 700ml Cocchi Americano
- 25g Butterfly Pea Tea
Preparation Steps
Step 1: Prepare the Jasmine Foam
In a siphon, combine the jasmine syrup, water, lime juice, and Proespuma.
Charge with 3 Proespuma capsules and shake well.
Refrigerate for at least 30 minutes to allow the foam to set.
Step 2: Infuse the Purple Angel Mix
In a 3-liter pitcher, combine the Clement Rhum Agricole, Koukoudo Mastiha, Cocchi Americano, and Butterfly Pea Tea.
Let the mixture sit at room temperature for 3 hours, stirring occasionally.
Strain the liquid and pour it back into the original bottles.
Alternative Method: If you have a sous vide setup, place the mixture in a vacuum-sealed bag and infuse at 55°C for 20 minutes for a faster, deeper extraction of flavors.
Serving Suggestion
