INGREDIENTS
Chicken
4 chicken fillets
200gr toasted breadcrumbs
10gr oregano
10gr thyme
20gr poppy seed
15gr salt
7gr pepper
60gr olive oil
Mashed potatoes
800gr potatoes
80gr butter
80gr heavy cream
salt, pepper
100gr grated gruyere cheese
Caramelized onions
200gr shallots
40gr butter
10gr sugar
10gr balsamic vinegar
salt, pepper, thyme
Method
Boil the potatoes with the skin, add salt, and cook till it can be pierced easily with a fork and strain them well. Remove the skin and grind them. Place them back in the casserole, add the butter, the cream, salt, pepper, the cheese and mix well. Fillet the chicken and bread it in the toasted bread mixture with the herbs. Sauté in a pan with olive oil and finish up the cooking in the oven. For the onions, remove the skin, sauté in a pan with the butter and cook slowly. Add the sugar, salt, pepper, thyme and the balsamic at the end
