Pork Knuckle with Baby Potatoes, Chestnuts & Grape Molasses

Pork Knuckle: 2,000 g | Baby Potatoes: 600 g |
Olive Oil: 100 g | Chestnuts: 150 g |
Thyme Honey: 40 g | Orange Juice: 100 g |
Grape Molasses: 20 g | Grape Molasses: 30 g |
Orange Juice: 30 g | Olive Oil: 80 g |
Lemon Juice: 20 g | Salt: 8 g |
Thyme: 2 g | Pepper: 2 g |
Oregano: 2 g | Thyme: 2 g |
Salt: 10 g | |
Pepper: 2 g |
Method
Marinate the pork knuckle in grape molasses, honey, olive oil, orange juice, lemon juice, and spices.
Wrap the pork in damp parchment paper and aluminum foil.
Bake at 140°C (284°F) for 2.5 hours.
Meanwhile, marinate the baby potatoes with the remaining ingredients.
Remove the parchment paper and foil from the pork knuckle.
Place the pork and marinated potatoes in a baking pan.
Bake at 170°C (338°F) for 1 hour.
